Beetroot hummus

Antioxidant rich beetroot makes this quick and easy recipe good for the heart along with plenty of fibre and good fats (linseed oil) to help keep cholesterol levels balanced. Serves 6, prep 10 mins, cook 45 mins •    2 medium to large (250-300g) beetroot left whole, skins scrubbed •    1 x 400g tin cooked chickpeas, rinsed & drained •    2 garlic cloves, peeled & crushed •    2 tbsp light tahini •    1-2 lemons •    pinch of ground paprika •    1 ½  tsp ground cumin •    2-3 tbsp linseed oil (or olive oil), plus a little extra for drizzling •    A little extra ground cumin and few shredded mint leaves to garnish Method Boil the beetroot until tender, drain and leave to cool, then rub off the skins when cool enough to handle.
